Alpha Granola

About the Recipe

Alpha Granola is the most basic granola created to please my finicky son who decided for a season that he didn't want any nuts or seeds. Alpha can be used as a base for granola bars, topping on oatmeal or chia pudding and basically any recipe that calls for granola.

Ingredients

DRY INGREDIENTS

  • 8 ¼  cups/ 21 oz old-fashioned rolled oats (regular or thick cut) OR sprouted rolled oats

  • 1 1/3 cup/ 3 oz coconut, shredded, unsweetened

WET INGREDIENTS

  • 4 tablespoons/ 2 oz organic butter, unsalted

  • 1/4 cup/ 2 oz   non-GMO rice brand oil or organic virgin coconut oil

  • 1/4 cup/ 2 oz honey, local

  • 1/3 cup/3 oz maple syrup

Preparation

Step 1

Line  (2) half sheet pans with parchment paper or silicone mats.

Preheat oven to 325F convection


Step 2

Blend the DRY ingredients, oats, and coconut in one bowl.


Step 3

In a small saucepan, gently heat the WET ingredients butter, oil, honey, and maple syrup on Low heat until the butter melts.  Whisk until the WET ingredients are a uniform brown color in the saucepan.


Step 4

Pour the WET mixture over the DRY ingredients. and using a spatula, coat all the mixture.  Pour out onto a sheet pan in a uniform layer. Using the back of the spatula, pat down the granola.  Place the sheet pan in the middle of the oven to bake.


To get clumps, cool completely on sheet pans on a wire rack before eating or storing. Scoop granola into an airtight glass container. Store for up to 4-6 weeks.  


Step 5

Bake time 22-25 minutes until oats turn light golden brown and coconut is medium brown.
